Fluffy Banana Loaf

The road to this banana bread was long and rocky - I always had problems because my banana bread always turned out rubbery. Until I figured out how to avoid this: You just have to use a wooden spoon and avoid using a hand mixer or other electrical devices. This way the bread stays light and moist - just as it should be.

Fluffy Banana Loaf

Ingredients

3 ripe bananas
80g soft butter
100g brown sugar (substitute)
2 eggs
200g flour
3 teaspoons of baking powder
1 pinch of salt
optional: Tonka bean, cinnamon, nutmeg, chocolate, nuts

    Instructions

    Mash the bananas and mix with the eggs, butter, salt and baking powder. Then carefully fold in the flour. As already mentioned, it is very important not to use a hand mixer or similar.
    Now just put it in a dish and bake for 40-45 minutes at 180 degrees (top/bottom heat).
