Go-to Dressings

Many salads often seem boring, even though they can be so versatile. What I particularly like about salads is the ability to vary the distribution of nutrients as desired: I add salmon, chicken or lentils for more protein, while avocado or nuts provide more fat and fewer carbohydrates. This way I can adapt the salad to my diet and preferences.

Often, however, the problem lies with the dressing, which means the salad lacks the right seasoning. For me, a good salad depends on the dressing, and that's why these recipes are among my absolute favorites. They are prepared in a flash, and I already have most of the ingredients at home. Whether I'm making a quick everyday salad or something special for dinner, I can add a delicious touch to any dish with these dressings.

avocado-basil dressing

1/2 avocado
1/2 spring onion
about 10 basil leaves
1 tablespoon lemon juice
3 tablespoons olive oil
2 tablespoons of water
1 teaspoon maple syrup
salt, pepper

Puree everything together. Done.

    balsamic vinaigrette

    35g olive oil
    16g balsamic vinegar
    1 teaspoon Dijon mustard
    1 teaspoon maple syrup
    salt, pepper


    lemon vinaigrette

    35g olive oil
    20ml lemon juice
    some grated organic lemon peel
    1 teaspoon Dijon mustard
    1/2 garlic clove, pressed
    1 teaspoon maple syrup
    salt, pepper
